Sunday is a probably a profitable time slot too, but Chick-Fil-A is closed.

With respect to opening later, my gut instinct is that, for a variety of reasons, companies have become more flexible about the margins they optimize on. I'm not offering it as a single one-size-fits-all reason, but my understanding is that lots of franchises, for example, have fairly strict operations rules that, of necessity, got lessened during COVID. E.G "You shall remain open from 8AM to 9PM unless prevented by local law". Before, everyone just sucked it up and did it. Now, as the local operator, maybe you get some leeway. Do I want to hire another part-time manager? Or do I just want to open an hour later? Or do I want to get up and come in an hour earlier myself? Different people are going to answer that question differently when they get those additional options.
